
Apple Clafouti
Ingredients
4 Large Eggs
1 Cup Whole Milk
8 Tablespoons Unsalted Butter Melted (1 stick)
1-1/2 Teaspoons Vanilla
1 Cup All-Purpose Flour
1/2 Cup Sugar
1/4 Cup Maple Syrup
1/2 Teaspoon Salt
5 Tart Apples
6 Tablespoons Unsalted Butter
1/2 Cup Sugar
1/4 Cup Maple Syrup
4 Tablespoons Brandy
3 Tablespoons Sugar
1 Teaspoons Ground Cinnamon
1/4 Cup Heavy Cream
Preparation
Preheat oven to 400 degrees
1. Put eggs, milk, melted butter, vanilla, flour, sugar, syrup and salt in a blender and blend until smooth. Set aside.
2. Generously butter a 12'' gratin dish and place it in the oven to heat.
3. Peel and core the apples, then slice them into even, thin slices.
4. Melt 6 tablespoons butter in a large skillet over medium-high heat. Add the apples and stir to coat them with the butter. Add the remaining 1/2 cup sugar, 1/4 cup maple syrup and the brandy. Cook until apples are glazed and heated through, about 5 minutes. Drain and reserve the juices.
5. Remove the gratin dish from the oven.
6. Immediately pour in half the batter. Arrange the warm apple slices over the batter, and then pour the remaining batter over the apples.
7. Combine the remaining 2 teaspoons sugar with the cinnamon and sprinkle this mixture over batter.
8. Return the gratin dish to the oven and bake until the clafouti is golden and set in the middle about 25-30 minutes.
9. Meanwhile, strain the reserved cooking syrup and chill it while the clafouti bakes.
10. When ready to serve, combine 1-1/2 cups heavy cream with the chilled cooking syrup in the bowl of a stand mixer. Whip to soft peaks and serve with slices of warm clafouti.
