Beef Tenderloin Steaks with Sauteed Arugula featuring Kings Peppercorn Steak Sauce

Four 5 oz Kings Beef Tenderloin Steaks
4 cups Kings organic arugula, washed well
2 tsp Kings organic garlic, minced
1 Kings organic shallot, peeled and minced
1 tbls Kings organic extra virgin olive oil
Salt and ground black pepper to taste
1 jar Kings Peppercorn Sauce

Preheat grill
1. Rub salt and ground black pepper on all sides of the tenderloin steaks. Let stand for at least 10 minutes.
2. Grill the steak on medium heat for about 4-6 minutes per side.
3. Remove the tenderloin steaks from the grill and let it rest for 10 minutes.
4. Heat a large pan and add in the extra virgin olive oil, add the garlic and shallots, sauté both for 3-4 minutes.
5. Carefully add in arugula and sauté for 2-3 minutes. Turning constantly and cover lower heat to low and slowly wilt. Taste and season with salt and pepper.
6. Arrange the arugula in a large serving plate.
7. Place the grilled tenderloin steaks on top of the arugula.
8. Serve with Kings prepared mashed potato on the side along with Peppercorn steak sauce.
