Chicken Mini-Burgers with Avocado

Ingredients

4 Sesame Seed Buns, Halved
2 Avocados, Pits Removed and Sliced Thinly
1 Tablespoon Lemon Juice
Salt and Pepper
1 lb Ground Chicken Meat
1 Teaspoon hot Pepper Flakes
3-1/2 Ounces Dried Bread Crumbs
1 egg, whisked
1 Tablespoon Chives, Finely Chopped
1 Tablespoon Parsley, Finely Chopped
3-1/2 Ounces Buffalo Mozzarella, Sliced Thinly
Arugula Leaves, to Garnish

Preparation

Preheat the grill to hot.

1. In a large mixing bowl, combine the ground chicken, eggs, bread crumbs, chopped herbs, 1/2 teaspoon of the dried  hot pepper flakes and some seasoning.

2. Mix using your hands until combined thoroughly.

3. Divide the seasoned meat into quarters and make patties with the chicken mixture roll between your palms to form a ball then flatten until you have the right shape. Transfer to the pre heated grill and grill until an internal temperature reaches 165 degrees F.  Remove from grill and keep warm.

4. Meanwhile, toast the sesame seed buns until golden brown.

5.  Arrange the burgers by placing slices of avocado on the bottom half of the burgers. Top with slices of the mozzarella.

6. Return to the grill for 1 minute to melt the cheese a little.

7. Remove and transfer to serving plates.

8. Garnish the tops with a few arugula leaves, the remaining pepper flakes and the top half of the buns.
