
Cornmeal Tart with Fresh Strawberries
Ingredients
8 Ounces cornmeal
2 Ounces flour
4 Ounces sugar
6 Ounces bleached almonds
6 Ounces unsalted butter
Pinch salt
1 Teaspoon almond extract
8 Egg yolks
1 Pound fresh strawberries, sliced
1/2 Cup Amaretto
1/4 Cup sugar
Preparation
Preheat oven to 375 degrees.
1. In a food processor fitted with a steel blade, blend the cornmeal, flour, sugar, almonds and salt. Blend until finely ground. Add the butter, almond extract, and egg yolks. Blend until smooth.
2. Place mixture in a greased 10-inch tart pan.
3. Bake tart in a 375 degree preheated oven until golden brown. Cool on a wire rack 20 minutes, transfer to a serving platter.
4. Soak strawberries in Amaretto and sugar for 20 minutes. Spread strawberry mixture on top of tart. Cut tart into wedges and serve.
