Ingredients

1/4 Cup Extra Virgin Olive Oil
1/4 Cup Fresh Lemon Juice
1 Large Garlic Clove
2 Tablespoons Chopped Flat Leaf Parsley
Salt and Freshly Ground Black Pepper
Crushed Red Pepper Flakes (optional)
1-1/2 Pounds Medium Shrimp, peeled And deveined

Preparation

1. Combine the olive oil and lemon juice in a small bowl. Whisk or beat with a fork to combine. Peel the garlic clove and mince it finely or pass it through a garlic press. Add the garlic to the bowl and whisk to combine. Stir in the parsley.

2. Taste for seasoning and add salt and pepper as needed. Add crushed red pepper flakes, if desired, to suit your taste.

3. Add the shrimp and stir to coat. Marinate in the refrigerator for 30 minutes, stirring occasionally.

4. Preheat the grill while the shrimp marinate.

5. You may grill shrimp directly on the grill if you have a rack to prevent the shrimp from falling through. Otherwise, skewer the shrimp lengthwise, 3 or 4 shrimp to a skewer.

6. Grill the shrimp 2-3 minutes per side, depending on the size of the shrimp and the temperature of the grill. The shrimp will be opaque and firm to the touch when cooked through.
