
Old Fashioned Apple Crisp
Ingredients
Apple Filling:
3 Pounds Tart Apples
1/3 Cup Sugar
1 Teaspoon Grated Lemon Zest
1/4 Teaspoon Ground Cinnamon
Pinch of Grated Nutmeg
Pinch of salt
4 Tablespoons Unsalted Butter (1/2 stick)
Topping:
1 Cup All-Purpose Flour
Pinch of Salt
1/2 Teaspoon Ground Cinnamon
1 Teaspoon Baking Powder
6 Tablespoons Unsalted Butter, melted
1/3 Cup Light Brown Sugar
1/4 Cup Rolled Oats
1/2 Cup Walnuts, Coarsely Chopped
Preparation
Set a rack in the middle level of the oven and preheat to 375 degrees.
1. Butter a 9-inch pie pan and set it aside.
2. Peel, halve, and core the apples and slice them about 1/4-inch thick across the core.
3. Place the apples in a large bowl and add all the remaining filling ingredients except the butter. Toss well to mix.
4. Place half the sliced apples in the prepared pan and dot with half the butter. Repeat with the remaining apples and butter.
5. For the topping, stir the flour, salt, cinnamon, and baking powder together and set aside.
6. Mix the butter and brown sugar in a medium bowl and add the flour mixture, oats, and walnuts. Use a rubber spatula to fold everything together until evenly mixed.
7. Scatter the topping on the apples in the pan and gently press it into place.
8. Bake the crisp for 45 to 50 minutes, or until it is bubbling and the topping is a deep golden color. (You can place a pan covered with foil on the rack below to catch drips.)
9. Cool on a rack and serve warm or at room temperature with whipped cream or ice cream.
