1 Tablespoons Dijon mustard
3 Tablespoons sherry-wine vinegar
2 Tablespoons minced shallots
3/4 cup Kings Extra Virgin Olive Oil
Kosher salt and freshly ground black pepper to taste
10 Ounces organic mixed baby greens
1 Cup dried cranberries
2 Granny smith apples, cored, halved, and sliced very thin
1 ½ Cups Kings walnuts, toasted and roughly chopped
5 Ounces goat cheese, crumbled
1. In a medium bowl, whisk together mustard, vinegar, and shallots until well blended. Continue whisking while slowly pouring in olive oil. Season with salt and pepper.
2. Mix organic greens, cranberries, and apple slices in a large bowl. Mix in enough dressing to coat. Serve on plates topped with the walnuts and goat cheese.
