Ingredients

 

1 Head Cauliflower
1/4 Cup Unsalted Butter
2-3 Garlic Cloves
1 Lemon
3-4 Tablespoons Extra Virgin Olive Oil
Kosher Salt and Freshly Ground Black Pepper
1/2 Cup Freshly Grated Parmesan Cheese

Preparation

Preheat the oven to 400 degrees F.

1. Generously butter a 9x13 baking dish or similar sized baking dish.

2. Cut the cauliflower into florets, cutting the larger pieces if necessary and place the cauliflower in a large bowl.

3. Peel the garlic and coarsely mince it. Add the garlic to the bowl with the cauliflower.

4. Juice the lemon to make 1/4 cup lemon juice. Combine the lemon juice with the olive oil. Add this mixture to the bowl and toss to combine thoroughly.

5. Pour the cauliflower mixture into the prepared baking pan. Bake in the preheated oven, uncovered, until the cauliflower is tender and is lightly browned, about 25-30 minutes.

6. Remove from the oven and sprinkle the grated Parmesan cheese on top. Serve immediately.
