Roasted Yukon Gold Potatoes and Chorizo

Ingredients

3 lbs Yukon Gold potatoes, scrubbed well and cut into 1” chunks
1 lb chorizo, sliced thin
salt
pepper
½ cup olive oil
6 cloves garlic, peeled
¼ cup chopped Italian parsley

Preparation

Preheat oven to 350 degrees.

1. Bring a pot of water to a boil, add garlic cloves to water and cook potatoes in salted water for 5-8 minutes, remove from water and cool. Discarding garlic cloves.

2. After potatoes are cool enough to handle, toss potatoes in a large bowl with olive oil and season with salt and pepper. Heat a large sauté pan and add sliced chorizo. Pan sear chorizo for 4-5 minutes.

3. Add to potatoes and arrange on a foil lined cookie sheet and place into pre heated oven and roast for 10-15 minutes or until golden brown.

4. Place roast potatoes and chorizo on a platter and drizzle with a little extra virgin olive oil. Garnish with chopped Italian parsley.
