Soft Shell Crabs w/ Roasted Tomato Coulis

6 Soft shell crabs
6 Slices pancetta
6 KINGS Organic Fresh Sage leaves
3 Cloves roasted garlic
1 Pint grape tomatoes, roasted
¼ Cup olive oil
1/2 Lemon, juiced and zested
¼ Cup drained capers
1 Tablespoon chopped Italian parsley
Salt
Pepper

Preheat grill on high

1. Season soft shell crabs with salt and pepper. Place a sage leaf on one side and wrap with pancetta.
2. Place roasted tomatoes, lemon juice, roasted garlic, chopped Italian parsley and capers in a food processor and blend well. Adjust seasoning with salt and pepper.
3. Grill wrapped soft shell crabs on preheated grill.  Grill for 3-4 minutes on all sides. Remove from grill and serve with roasted tomato coulis.
