
Pesto Mint Sauce
Ingredients
1 Bunch fresh chopped Italian Parsley
½ Bunch fresh chopped Mint
1 Cup Olive Oil
¼ Cup fresh Lemon juice
Zest of one Lemon
¼ Cup grated Parmesan Cheese
2 Cloves of Garlic
Salt
Pepper
Preparation
1. Place parsley, mint, parmesan cheese, garlic and lemon juice and zest in the food processor or blender.
2. While machine is running slowly pour in olive oil until smooth. Adjust seasoning with salt and pepper.
3. Chill.
