
Phyllo Pockets with Peppers and Feta
Ingredients
1 lb phyllo dough
12 oz feta cheese
2 assorted colored peppers
¼ cup olive oil
salt
pepper
2-3 tbls fresh chopped thyme
2 tbls fresh chopped Italian parsley
Preparation
Preheat oven to 450 degrees.
1. Roast peppers by placing under your broiler until all sides are blacken, place blacked peppers in a bowl and cover with foil. After 10 minutes brush away blacken skin, julienne and diced.
2. Layout phyllo dough paint each layer (4) with olive oil, seasoning with salt and pepper.
3. Cut layered sheets into three strips (long ways) and then cut in half (forming six rectangles).
4. On each rectangle top with 1 tsp feta cheese and 1 tbls diced roasted red peppers adding a pinch of herbs on the top of each layered sheet.
5. Fold into triangles (Boy/Girl Scout flag fold) seal well with olive oil. Roast in preheated 450 degree oven.
6. Roast until golden brown approx. 8-10 minutes.
