
Potato Latkes (Potato Pancakes)
Ingredients
6 Large potatoes
1 Large onion
1/2 Cup sour cream
1 Teaspoon salt
2 Eggs
1/2 Teaspoon pepper
1/4 Cup flour
1/2 Cup bread crumbs
Oil for frying
Preparation
1. Chop onion in food processor with steel blade.
2. Mix onion, sour cream, salt, eggs, pepper, flour, and bread crumbs in a large bowl.
3. Peel and shred potatoes in food processor with shredding blade. Squeeze dry and immediately add to sour cream and egg mixture. Mix well.
4. Fry latkes in oil until golden on both sides. Serve hot.
NOTES : Can be frozen and reheated in low oven.
