Red Potatoes with Lemon Caper Sauce

8 Small Red Potatoes, Rinsed Well & Cut into 1/8 ths
2 Tablespoons Diced Onion
3 Tablespoons Kings Organic Butter, Melted
1/4 Cup Lemon Juice
Zest of One Lemon
2 Tablespoons Capers
1 Tablespoons Salt
Grinding of Fresh Black Pepper
1/4 Cup Grated Parmesan Cheese
2-3 Tablespoons Chopped Italian Parsley

1. Cover potatoes with water, bring to a boil, reduce heat and cook 8-10 minutes (until tender). Drain and arrange slices on platter and keep warm.

2. Sauté onion in butter until tender. Reduce heat, stir in lemon juice, capers, parsley, salt and pepper. Cook until mixture is heated. Pour over potatoes. Sprinkle with Parmesan cheese.
