
Roasted Scallops with Shrimp and Bacon
Ingredients
1 Cup Tequila
2 Limes zested and juiced
12 Large Bay Scallops
12 Medium Shrimp -- peeled and deveined
1/2 Pound Bacon
1 Cup Ketchup
1 Hot Pepper
1/4 Cup Tomato Paste
Salt and Pepper
Preparation
1. Line bacon onto a cooking sheet and roast until halfway cooked. Remove from oven and cool.
2. Place ketchup, tomato paste, hot pepper, tequila and lime zest and juice into a sauce pan. Bring to a simmer. Season with salt and pepper.
3. Carefully slice open scallop creating a hinge, place peeled shrimp inside. Wrap pre-cooked bacon around shrimp and scallop, paint with Tequila BBQ sauce and bake for 5-8 minutes at 400 degrees or until crispy.
4. Serve with extra BBQ sauce.
