Organic Greens w/ Cranberries & Pecans

Ingredients

4 Quarts organic mixed greens
2 Cups spiced pecan halves
1 Cup goat cheese, crumbled
1 Cup dried cranberries, plumped
¼ Cup Kings balsamic vinegar
1 Tablespoon orange zest
2 Teaspoons Dijon mustard
2-3 Tablespoons shallots
¼ Cup canola oil
¼ Cup olive oil
Salt & pepper, to taste

Spiced Pecan Halves:
¼ Cup melted Kings butter
2 Tablespoons brown sugar
1 Teaspoon paprika
½ Teaspoon cinnamon
¼ Teaspoon cayenne
1 Teaspoon kosher salt
2 Cups pecan halves

Preparation

1. Place greens, pecans, cheese and cranberries in a large bowl.  Cover with damp paper towels until ready to toss.
2. In a small bowl combine vinegar, orange zest, mustard and shallots.  Slowly whisk in oils and season with salt and pepper.  Toss dressing with greens and serve.

Spiced Pecan Halves:
Preheat oven to 325 Degrees
1. Combine spices and butter. 
2. Toss with pecans and lay on a lined sheet pan. 
3. Bake in preheated 325-degree oven and bake 15-18 minutes.
4. Cool completely and serve as directed above.
