
Sesame Ginger Haricot Vert Salad
Ingredients
1/8 Cup Champagne Vinegar
1 Clove of Garlic, Minced
1 Tablespoons Fresh Ginger, Minced
1 Tablespoons Lite Soy sauce
3 Tablespoons Toasted Sesame Oil
1 lb Haricot Vert
1 Cup Grape Tomatoes
Salt and Pepper to taste
Chill oil to taste
2 Scallions, Sliced Thin
1 Teaspoon Sesame Seeds, Toasted
Preparation
1. Blanch haricot vert in salted boiling water for 5-6 minutes or until tender, drain. Plunge into cold water after cooking to retain bright green color. Drain well.
2. To form dressing, whisk together champagne vinegar, minced garlic and ginger, soy sauce, toasted sesame oil and chili oil.
3. Quarter the grape tomatoes.
3. Mix beans and tomatoes with dressing and garnish with scallions and sesame seeds.
