
Sponge Cake
Ingredients
6 Fresh Eggs, Separated
1 Cup Granulated Sugar
1/2 Cup Water
1 Teaspoon Pure Vanilla Extract
1 Cup Cake Flour
1/2 Teaspoon Cream of Tartar
1/4 Teaspoon Salt
Fresh Fruit, for Garnish (Optional)
Preparation
Preheat oven to 325 degrees F.
1. In a large bowl, beat the egg yolks until very thick. Gradually, beat in sugar. Add water, and vanilla. Slowly, beat in cake flour.
2. In a separate bowl, beat egg whites until light and frothy. Add cream of tartar and salt. Continue beating until whites form stiff peaks. Fold the egg whites into the egg yolk mixture.
3. Pour batter into an ungreased 9-inch tube pan. Bake for one hour, or until a cake tester inserted in the middle comes out clean.
4. Allow to cool. Carefully remove from pan and transfer to cake platter. Slice and serve. Garnish with individual plates with fresh fruit, if desired.
