Super Hearty Turkey Chili

Ingredients

2 Tablespoons Kings Extra Virgin Olive Oil
1 Large Onion, coarsely chopped
2 Pounds Ground Turkey (try 2 pounds of cooked shredded chicken breast for a delicious twist)
6 Ounces Tomato Paste
3 Cloves Garlic, minced
1 Tablespoon Ground Cumin
3 Tablespoons Chili Powder
2 Teaspoons Dried Basil
2 Teaspoons Dried Oregano
1 Can Italian Plum Tomatoes, hand crushed
1/4 Cup Chopped Parsley
1 Cup Chicken Broth
1 Jalapeno Chili Pepper, seeded & minced
1 Can Kings Organic Dark Red Kidney Beans, drained
Salt and Pepper

1 Cup Shredded Light Cheddar Cheese
¼ Cup Chopped Cilantro
½ Cup Light Sour Cream

Preparation

  1. Heat the olive oil in a very large pot. Add the onions and cook over low heat, stirring occasionally, until wilted, about 15 minutes.
  2. Add the ground turkey; cook over medium high heat, stirring, until the meat is well browned. Spoon off any excess fat and discard.
  3. Stir in the tomato paste, garlic, cumin, chili powder, basil, oregano, salt and pepper.
  4. Add the tomatoes, parsley, broth, chili pepper and beans. Stir well and simmer, uncovered, for another 15 minutes.
  5. Taste and adjust seasonings. Simmer for 5 minutes more to heat through. Serve immediately.
  6. Top with cheese and sour cream. Garnish with cilantro.
