Tuna Tartare served in Cucumber Cups

½ Pound Yellow Fin Tuna
¼ Teaspoon Minced Ginger
1-2 Cucumbers, peeled and cut into 2” long pieces
1 Teaspoon Toasted Sesame Oil
Tabasco Sauce
1/8 Cup Toasted Sesame Seeds
2 Tablespoon Chopped Cilantro
2 Cups Baby Lettuce

1. Carefully fine dice tuna.
2. At the last minute before service season tuna with Tabasco, toasted sesame oil, rice wine vinegar, cilantro, minced ginger, salt and pepper.
3. Using a melon baller, carefully scoop our 2/3rds of the inside of the KINGS Cucumber forming a cup.
4. Arrange baby lettuce on a platter and top with seasoned cucumber cups and fill with seasoned Tuna. Sprinkle with toasted sesame seeds.
