Vegetable Crudite Platter

Ingredients

6 Fresh Peppers - Red, Yellow and Orange, 2 of each
1 Large Seedless Cucumber, peeled
1 Teaspoon Salt
8 Ounces Cream Cheese, softened
2 Tablespoons Sour Cream
2 Teaspoon Chopped Fresh Thyme
1 Teaspoon Lemon Zest
1/4 Teaspoon Finely Ground Black Pepper

Preparation

1. Combine the cucumber and salt in the bowl of a food processor fitted with a metal blade. Process until the cucumber is puréed; strain the mixture through a fine strainer and set aside.
2. Place the cream cheese, sour cream, thyme, zest, and pepper in a small bowl and stir until smooth. Add the pureed cucumber and stir to combine, cover, and refrigerate until ready to serve. Garnish with fresh thyme, if desired, and serve with fresh raw peppers.
