
White Beans and Chorizo
Ingredients
2 Cups canned cannellini beans, do not drain liquid from can
½ Pound Chorizo sausage, casing removed and medium diced
12 Ounces fresh baby spinach, rinsed and drained well
½ Cup small diced onion
½ Cup small diced carrots
½ Cup small diced celery
1 Cup white wine
1 Teaspoon tomato paste
2 Cloves of garlic, minced
½ Teaspoon smoked paprika
2 Tablespoons olive oil
2 Tablespoons chopped Italian parsley
Preparation
1. In a large sauté pan, heat olive oil over medium heat. Add in the onions, carrots and celery. Cook until soft approx. 5 minutes. Add in the garlic and sauté for an additional 2-3 minutes.
2. Whisk in the tomato paste, white wine and smoked paprika.
3. Add the white beans, including the liquid they are packed in. Bring to a low simmer and cook until the stew thickens about 10 minutes.
4. Turn off the heat and stir in the fresh spinach.
5. Adjust seasoning with salt and pepper. Finish with the chopped Italian parsley.
