Asian Lettuce Wrap Reuben
A leaf of Boston Lettuce holds a bundle of broccoli slaw, julienned red pepper and scallions, all mixed in a tart and sweet Peanut Sauce. Add the brined, meaty quality of shredded Corned Beef, and you'll find what we look for in umami-flavors. Sriracha mayo and a dusting of chopped salted peanuts are perfect substitutes for the creamy, salty cheese of the original.
1 C Shredded corned beef
4 leaves Boston lettuce, washed and dried
¼ C each chopped salted peanuts and thinly sliced scallions
Sriracha Mayo – your favorite brand, or stir sriracha into mayo to taste
1 C Shredded broccoli slaw, available pre-packaged in our produce department
¼ C each julienned red bell pepper
2 Tbsp thinly sliced scallions
2 Tbsp House of Tsang Bangkok Peanut Sauce, more to taste
Toss all ingredients together, taste and add more dressing if desired.
Top each lettuce leaf with shredded corned beef, the shredded broccoli slaw. Drizzle with sriracha mayo and garnish with chopped peanuts and scallions. Serve immediately with extra peanut sauce for dipping.
