
Bacon Wrapped Duck Morsels With Pecorino Toscano
Ingredients
1 pound duck breast, skin removed, cut into strips (1/2 inch wide x 2 inch long)
20 pieces (2 inch long x 1/4 inch wide) of aged Pecorino Toscano PDO cheese
20 strips of bacon
4 small fresh sage leaves
6 ounces pinot grigio
1/4 cup chicken stock
2 tablespoons extra virgin olive oil
Directions
Place a piece of cheese into each slice of duck. Roll up and then wrap a piece of bacon over each duck and cheese morsel. Heat a large saute pan to medium high heat, and add olive oil. Place bacon wrapped duck in the pan and cook on all sides, carefully add in white wine and cook until evaporated on medium heat. Add the sage and chicken stock in the pan and cook until absorbed. Plate the veal morsels and cover with pan sauce. Serve immediately.
