Beer Glazed Corned Beef
4-1/2 pounds corned beef with seasoning pack
12 ounce bottle of dark beer (like Guinness)
1 cup apricot preserves
1/4 cup honey
1/4 cup brown sugar
2 tablespoons soy sauce
2 tablespoons freshly mashed ginger
1/8 teaspoon fresh ground pepper
Preheat oven to 350°F. Spray a large glass baking dish with non-stick cooking spray. Rinse corned beef and place in prepared baking dish. Add 1-1/4 cups of beer and included seasoning pack, then cover tightly with aluminum foil and bake for 2-3 hours. Drain liquid after cooking.
In a small bowl, combine apricot preserves, remaining beer (1/4 cup), honey, brown sugar, soy sauce and mashed ginger. Spread the apricot mixture evenly over the corned beef. Bake uncovered for 25 to 30 more minutes, or until the meat is tender. Baste occasionally with pan drippings. Slice corned beef across grain and serve.
