Brussels Sprouts with Applewood Smoked Bacon
3 slices bacon, cut into 1/2-inch pieces
4 pints organic Brussels sprouts, ends trimmed and halved
2 tsp apple wine vinegar
2 tbls chopped fresh organic Italian parsley
Preheat oven to 425 degrees.
1. Arrange bacon in a single layer on a large rimmed baking sheet. Bake until browned, 10 minutes.
2. Add Brussels sprouts in a single layer; sprinkle with salt and pepper. Roast until they are brown and tender, about 30 minutes.
2. Toss vegetables with vinegar, top with chopped parsley and serve immediately.
