Cheesy Cauliflower Bites with Sriracha Mayo
1.5 cup Flour
1 tsp baking powder
1 cup Shredded Sharp Cheddar Cheese
1 Head of Cauliflower, riced
1/2 cup Milk
3 cloves garlic
2 tablespoons fresh Chives, chopped
1 tsp red pepper flakes, optional
1/4 cup Kewpie Mayo OR Mayonnaise
3 tbsps Sriracha
1/2 lemon, juiced
1 tsp Garlic Powder
1 tsp Onion Powder
Salt and Pepper, to taste

Preheat oil in a large pan or deep fryer. Pulse cauliflower in a food processor until riced.
Combine flour, baking powder, cheese, riced cauliflower, red pepper flakes, chives, diced garlic, and salt and pepper, to taste. In a seperate bowl, mix together 2 eggs and milk. Pour into cauliflower mixture and mix together until fully combined.
Add a heaping tablespoon to the oil and fry until golden brown, about 4 minutes each side. Remove from oil and allow to cool on a drying rack or paper towel.
Mix together kewpie/mayo, sriracha, lemon juice, garlic powder, and onion powder for sriracha mayo.
