
Chipotle Salmon with Pomegranate Arils
Ingredients
4 Salmon Filets
1 1/2 tsp Chipotle Seasoning ( I used THIS)
2 Lemons, juiced
3 cloves Garlic
1 Sweet Potato, large
1 Pomegranate, for garnish
Sesame Seeds, for garnish
3 tbsp Olive Oil

Preheat oven to 425 Degrees F. Slice one sweet potato and add to a baking sheet. Dice garlic cloves. Lay salmon on the same baking sheet and squeeze lemon juice on top. Drizzle olive oil and add diced garlic and seasonings and mix together.
Bake on the second highest rack of the oven for 10 minutes. Remove from oven and flip sweet potatoes over and bake for an additional 5 minutes. Turn oven to broil on High and broil for 3-4 minutes. Watch VERY CLOSELY while broiling.
Remove from oven and garnish with pomegranate arils, sesame seeds, and fresh basil.
Eat!
