Corn And Heirloom Tomato Salad
4 ears sweet corn, cooked and kernels cut off the cob
1 large ripe heirloom tomato, cored and medium diced
2 shallots, minced
12 basil leaves, roughly torn
1/4 cup extra virgin olive oil
Salt and pepper
Combine all ingredients and let sit for 15 minutes to let the flavors combine. Serve on a chilled plate for a summer treat!
