Cranberry and Bourbon Marmalade
1 pound fresh cranberries
1 1/2 cup sugar
2 tablespoons orange zest
2 ounces of sweet, high-quality bourbon
Place cranberries, sugar, orange zest and bourbon in heavy bottomed pot, and cook over medium heat until the sugar is completely dissolved and cranberries pop and start to breakdown, about 20 minutes.
Turn heat down to low, and stirring often to prevent burning, and cook cranberry mixture until the natural pectin is activated, another 10-15 minutes.
Remove from heat, chill then serve.
