Creamy Onion Soup

4 tablespoons butter 

6 cups white onions, thinly sliced 

4 tablespoons flour 

5 cups chicken broth 

1 clove 

1 bay leaf 

1 garlic clove, smashed 

5 ounces crumbled blue cheese 

2 ounces port wine 

Salt and pepper 


Heat the butter in a heavy bottom sauce pot. Add the onions and cook over medium-low heat, stirring occasionally. Cook until deep golden brown, approximately 25 minutes. 

Then, add the garlic, bay leaf and clove. Stir in the flour until well distributed, then add the broth and simmer for 35 minutes. 

Remove the clove and bay leaf and puree with an immersion blender or in a traditional blender and serve hot. Top with crumbled blue cheese and a drizzle of port wine.
