Crispy Fried Calamari with Lemon and Parsley

Vegetable or Canola Oil for Frying

1.5 lb. Cleaned Squid, Tubes and Tentacles, Cut Bodies into ½” Rings

3 Cups All Purpose Flour

½ Cup Yellow Corn Meal (Optional)

1 cup Fresh Italian Parsley Tops, Washed, Dried in paper towel

Sea Salt

Fresh Ground Black Pepper

Lemon, cut into Quarters


Heat oil in cast Iron skillet or high side Dutch oven over medium heat to 350 degrees

Oil should be at least 3 inches deep

Add Flour Corn Meal, Sea Salt, Black Pepper In a mixing bowl

Mix squid in small batches with the flour mixture to evenly coat the pieces.

Shake off excess flour and fry in oil for approximately 1 minute until slightly golden in color

Remove from oil and place on tray with paper towels and season with salt

Lightly coat Parsley tops with flour mixture and fry into crispy also. Add to platter of Fried Calamari

Serve with fresh Lemon Quarters
