
Garlic Roasted Berkshire Pork Roast
Ingredients
1 (3 pound) Berkshire pork loin
2 Tablespoons extra virgin olive oil
1 Tablespoon minced garlic
½ cup finely chopped parsley
2 teaspoons orange zest
10 whole peeled garlic cloves
1 teaspoon salt
1 teaspoon black pepper
Directions
Preheat the oven to 425° degrees.
Mix the olive oil, garlic, parsley, orange zest, garlic cloves, salt, and pepper in a small bowl. Spread the mixture all over the pork loin. Place the pork onto a roasting pan and place it into the oven.
Bake for 15 minutes. Reduce the oven to 375° degrees and cook for 30 minutes more or until the internal temperature reaches 140° degrees when checked with an instant read thermometer. Remove the roast from the oven and let it rest for 10-15 minutes before carving.
Remove the whole garlic cloves and thinly carve the roast and serve with the pan juices.
