Grilled Peaches With Lemon Mint Mascarpone
2 ripe peaches
2 tablespoons extra virgin olive oil
1/2 cup mascarpone cheese
1 teaspoon lemon zest
2 teaspoon fresh mint, chopped
½ teaspoon ground cinnamon
Salt and pepper
Mint sprigs to garnish
Preheat grill to medium high heat.
Cut peaches in half, brush with olive oil and season with salt and pepper. Spray the grill liberally with cooking spray, then grill peaches cut side down for about 3 minutes or until the peaches begin to char and soften. Place peaches on platter and set aside.
Then, mix together the mascarpone, lemon, cinnamon, chopped mint and a pinch of black pepper. Dollop cheese mixture over peaches, slightly filling cavities and garnish with mint sprig.
