Grilled Shrimp Tacos With Ginger Lime Marinade

16 medium shrimp, peeled and deveined

8 small soft corn tortillas

1 cup shredded lettuce

1/2 cup chopped tomatoes

1/4 cup red onion, thinly sliced

1 ripe avocado, peeled and diced small

For the Ginger Lime Marinade:

1 1/2 cups fresh cilantro leaves, chopped 

3/4 cup scallions, thinly sliced

1/4 cup fresh ginger, peeled and chopped

Juice and zest of 2 limes 

1 1/2 teaspoon salt 

1 1/2 teaspoon dark toasted sesame oil 

2-3 garlic cloves, chopped 

1 jalapeno pepper, seeded and chopped 


Preheat grill to high heat. Combine all the ingredients for the ginger lime marinade and place in a food processor and mix until blended. Set aside, reserving 1/2 cup to use for later. Toss peeled shrimp with remaining ginger lime marinade in a stainless steel bowl, cover and marinate for 15 minutes.

Remove shrimp from bowl and discard raw shrimp marinade. Grill shrimp 2-3 minutes or until done, turning once. Build grilled shrimp tacos with soft corn tortillas, lettuce, tomatoes, red onions, diced avocado and grilled shrimp, drizzle with remaining ginger lime dressing.
