Guacamole Made in a Molcajete

½ teaspoon garlic, minced

1 teaspoon Serrano pepper, chopped

1 ½ tablespoons white onion, chopped

½ teaspoon coarse salt

1 teaspoon freshly squeezed lime juice

1 Haas avocado

2 tablespoons plum tomatoes, seeded and diced

1 ½ tablespoons fresh cilantro, chopped


Using the molcajete (mortar and pestle), mash the garlic, serrano peppers, onions, salt and lime to release their juices. Remove from molacajete and set aside. Cut avocado in half and remove pit. Scoop out the flesh with a spoon, and add avocado to molcajete and mix to a creamy consistency, keeping it as chunky as desired. Add the mashed avocado to the tomatoes and cilantro mix and fold together gently. Serve with tortilla chips and cerveza.
