Icelandic Cod Fillet with Herbed Panko Crust
2 Pounds – fresh Icelandic Cod Fillet, Skinned
2 Cups Panko Breadcrumbs
12 Tablespoons Unsalted Butter
1/2 Cup Italian Parsley, Rough chopped
2 Tbsp. Onions, Very small dice
1 Clove, Garlic, Minced
Salt and Freshly Ground Black Pepper
Preheat Oven to 375 degrees
Sauté Onions and Garlic in 3 tbsp. melted butter until translucent. Remove from heat.
Add Panko & Parsley to onion and butter mixture. Reserve on flat dish.
Melt 3 tablespoons butter and line inside of baking casserole
Melt reserved butter and dip fish into melted butter and immediately dredge buttered fillets through panko mix.
Arrange in baking dish with skin side of fish on bottom of dish.
Bake for 15-20 minutes or until fish flakes easily with fork. Do not overcook
Serve with fresh lemon immediately
