Ingredients

1 cup sugar 

4 eggs 

1 teaspoon of baking powder 

1 lemon rind, grated 

2 cups of all-purpose flour 

1 cup extra virgin olive oil

Directions

Preheat oven to 350°F. 

In a large bowl, combine the sugar with eggs, then beat with an electric mixture until smooth. Add baking powder, grated lemon rind, flour and olive oil, and place the smooth mixture in a greased oven safe baking dish and cook for about 30 minutes. 

Allow to cool slightly and serve with homemade whipped cream and freshly cut fruit.
