Mediterranean Style Cod with Citrus, Caper & Olive Relish
4 - 4 oz Cod fillets
2 blood oranges
2 teaspoons capers, minced
1 shallot, minced
1/4 cup oil cured black olives, pitted and roughly chopped
1/4 cup fresh parsley, roughly chopped
1/4 cup organic olive oil
1 bunch fresh organic chives, minced
Salt and pepper to taste
First, prepare the citrus relish by supreme or segmenting the citrus.
Take the blood oranges, lemon and grapefruit, and using a paring knife, remove the peel.
Then segment each piece of citrus, and remove from the fruit.
Place segments into a bowl.
Add capers, shallots, olives and parsley, along with a pinch of salt and pepper.
Mix lightly and chill until ready to serve.
Then, cook the cod by lightly coating with salt and pepper on both sides of the fish.
In nonstick skillet, heat pan to medium heat, and add 2 tablespoons of olive oil.
Place fillet, bottom side down, and cook for 3 minutes.
Using a spatula, gently turn the fish over and cook on the other side for 3-4 minutes.
Remove from heat and plate immediately.
Top with relish and chopped chives and serve.
