A corn tortilla will overpower the corned beef, so choose a flour tortilla. Create a base of avocado, seasoned with lime. Layer on a pile of shredded Corned Beef. Add a brilliant slaw assembled from shredded red and green pepper, minced red onion mixed with a corn, black bean and red pepper salsa, a drizzle of ancho and lime sour cream and a sprinkling of Queso Blanco.

Ingredients

1 C Shredded corned beef

1 Avocado, ripe, sliced and seasoned with lime, kosher salt

4 flour tortillas

2 oz Shredded Queso Blanco (about 1 Tbsp per taco)

 

Ancho – Lime Sour Cream

1/4 C sour cream

¼ tsp dried ancho chili powder

A squeeze of fresh lime

 

Slaw

1 C shredded green & red cabbage, available pre-packaged in our produce department

1 Tbsp each minced red onion

2 tsp fresh chopped cilantro or flat leaf parsley

¼ C Corn, Black Bean and Red Pepper Salsa from Desert Pepper Trading Company.  

Directions

Ancho – Lime Sour Cream

Stir ingredients together adding more lime to taste.

 

Slaw

Toss all slaw ingredients together, taste and add more salsa if desired.

 

Assembly 

Top each flour tortilla with shredded corned beef, the shredded cabbage slaw, and queso blaco then drizzle on ancho-lime sour cream and serve immediately.
