
Mixed Green Salad With Pears And Gorgonzola Vinaigrette
Ingredients
10 ounces mixed greens
1/2 cup crumbled Gorgonzola cheese
1 tablespoon Dijon mustard
3 tablespoon sherry-wine vinegar
2 tablespoon minced shallots
3/4 cup extra virgin olive oil
Salt and pepper
1 cup dried cranberries
2 pears, cored, halved, and sliced very thin
1 1/2 cups walnuts, toasted and roughly chopped
Directions
In bowl, whisk together mustard, vinegar, Gorgonzola and shallots until blended. Continue whisking while pouring in olive oil. Season with salt and pepper and set aside. Mix salad greens, dried cranberries and pears slices in a large bowl. Coat with dressing and top with walnuts. Serve immediately.
