Parmesan Roasted Asparagus
1 bunch asparagus, ends trimmed
2 tablespoons extra virgin olive oil
1/4 cup Parmesan cheese, finely grated
1/2 teaspoon black pepper
Preheat the oven to 450°F.
Toss the asparagus with olive oil and Parmesan cheese to coat, and arrange the asparagus on a baking sheet in a single layer. Place baking sheet in the oven and roast for 8 to 12 minutes, until the asparagus is just tender and Parmesan is golden brown. Remove cookie sheet from the oven and sprinkle the asparagus with black pepper. Remove from baking sheet and serve immediately.
