Pickled Watermelon Rind
5 parts watermelon rind
½ parts kosher salt
3 parts white wine vinegar
3 parts granulated sugar
¼ parts pickling spice
Peel the outer layer of skin from the watermelon rind.
Cut the rind into 1x1 inch cubes.
Fill a pot with water. Add in 1 tbsp of salt per 2 cups of water. Bring this to a boil. Add in the rind and simmer for about 5 minutes, until the rind is tender but still has a bite to it.
Drain and place the watermelon rind in a heatproof container.
In a pot, combine the vinegar, sugar, pickling spice, salt and 2 parts water. Bring this mixture to a boil, stir to dissolve the sugar and salt.
Pour the hot liquid into the heatproof container with the watermelon rind. Let cool to room temperature.
Store the watermelon rind in refrigeration
