Quick Breakfast Burrito
2-6 inch soft corn or flour tortillas
1 tablespoon salsa verde or mild salsa
1 teaspoon chopped fresh cilantro
2 tablespoons sour cream
2 slices cooked turkey bacon
2 tablespoons crumbled queso fresco
1/2 cup liquid egg whites
Mix salsa, cilantro and sour cream together, set aside. Meanwhile, heat a medium nonstick skillet to medium heat and coat with cooking spray.
Cook the egg whites for about 90 seconds, then add in queso fresco and cook for an additional 30 seconds. Lay out tortillas on a microwave safe plate and divide the scrambled eggs between the tortillas. Top eggs with salsa mixture and top with turkey bacon. Roll to form a burrito and microwave for 30 seconds uncovered and enjoy!
