Roasted Swordfish With Dill And Mustard Crust

4-6 ounce swordfish steaks

1/2 cup fresh dill, chopped

1/2 cup + 2 tablespoons Dijon mustard

1/2 cup whole grain mustard

Salt and pepper

4 sprigs fresh dill for garnish 


Preheat oven to 400°F. 

Mix together the chopped dill and 1/2 cup of both mustards in a stainless steel bowl. Being sure to mix well to ensure a smooth consistency. Pat swordfish steaks with a paper towel to remove any excess moisture, then brush tops of swordfish with the additional 2 tablespoons of Dijon mustard and season with salt and pepper. Then, evenly divide mustard and dill coating over the four steaks.

Transfer prepared swordfish steaks to a foil lined baking sheet. Roast for 12-15 minutes until crust is golden brown and an instant read thermometer reads 145-150°F. Serve and garnish with fresh dill sprigs.
