Salmon and Asparagus Foil Packs
4(6 ounce) salmon fillets, seasoned with salt and pepper
1 pound asparagus, trimmed
8 Tablespoons butter, softened
1 Tablespoon minced garlic
1 teaspoon lemon zest
2 Tablespoons freshly squeezed lemon juice
1/4 cup minced parsley
1/2 teaspoon salt
12 lemon slices, about 1/8 inch thick
4(15x15 inch) pieces aluminum foil
Preheat the oven to 425°F
Add the butter, garlic, lemon zest, lemon juice, parsley, and salt to a small bowl and mix to combine.
Lay a piece of aluminum foil onto a flat surface.
Place 1/4 of the asparagus in the middle of the foil, top with a salmon fillet.
Spread 2 Tablespoons of the butter over the salmon and place 3 lemon rounds over the butter.
Fold the aluminum foil over the salmon and seal the edges tightly.
Repeat with the remaining ingredients.
Place the foil packets onto a baking pan and bake for 15-18 minutes. Remove the pan from the oven, let rest for 5 minutes and serve.
