Seared Halloumi Cheese Bites
4 packages of Halloumi cheese (about 35 ounces each)
1/3 cup lemon juice
¼ cup extra virgin olive oil
1 clove garlic, peeled and roughly chopped
2 tablespoons fresh mint, roughly chopped
2 tablespoons fresh basil, roughly chopped
Fresh ground black pepper
In a bowl, combine garlic, olive oil, lemon juice, mint, basil and black pepper. Mix until thoroughly combined, set aside. Drain the liquid from the packages of Halloumi and slice each block in half, then each half into 2 triangles. Mix the Halloumi with the marinade mixture, making sure to coat each piece well. Wrap bowl in plastic wrap and refrigerate for at least 4 hours, or overnight.
Remove the Halloumi from the marinade, then heat a large skillet over medium heat with 1 tablespoon of olive oil. Lightly pat dry each piece of Halloumi, then place in pan and cook until golden brown on one side, about 3 minutes. Flip and cook for an additional 3 minutes. Once cooked, garnish with more mint and basil leaves and serve.
