Sesame-Crusted Seared Tuna Steak with Fresh Chili-Ginger Ponzu & Jasmine Rice


Ingredients

1 ½" thick tuna steaks

Jasmine rice

Black and white sesame seeds

Sliced chili peppers

Fresh minced garlic

Lime juice

Ponzu sauce

Cilantro

Olive oil

Coarse salt 

Black pepper

Directions

Buy thick steaks—1 ½" thick is perfect to allow time to sear the outside and keep the center rare. 

Season the steaks with coarse salt and black pepper and then press into a mixture of white and black sesame seeds to fully crust each side. Place a sauté pan over medium-high heat with enough oil to coat the bottom and heat until the oil just begins to smoke, then sear the tuna for 2–3 minutes per side, until the sesame seeds are golden. Serve or slice immediately to limit carryover cooking.

Stir thinly sliced chili peppers, minced fresh ginger, lime juice and cilantro into your favorite ponzu to make a light sauce. Serve with jasmine rice.
