Sweet and Spicy Acorn Squash

2(1-1/2 pound each) acorn squash

1/3 cup olive oil

2 Tablespoons Pure honey

1 Tablespoons garlic chili paste

1/2 teaspoon ground cumin

2 teaspoons minced garlic

1/4 cup roughly chopped fresh cilantro


Preheat the oven to 400° degrees.

Carefully cut both acorn squash in half and using a spoon scoop out the seeds. Cut each half into 1/2 inch wedges.

Add the olive oil, honey, garlic chili paste, cumin, and garlic to a mixing bowl and whisk to combine.  Add the squash wedges and toss to coat.  Place the wedges onto a greased baking pan and cook for 8 minutes. Turn the squash over and cook for 8 minutes more. 

Remove the squash from the oven and sprinkle with the cilantro before serving.
