Sweet Potato Noodle Kugel

1 large sweet potato, peeled, boiled and mashed

1 pound broad egg noodles

7 eggs

1 cup sugar

3 cups milk

1 pound cottage cheese

1 pint sour cream

1 ½ teaspoon vanilla

½ cup butter, melted

1 ½ cups Cornflakes cereal

2 tablespoons sugar

1 tablespoon cinnamon

½ cup golden raisins (optional)


Preheat oven to 350°F. 

Bring a large pot of water to a boil, then cook the noodles in boiling water for about 10 minutes and drain. Then, butter a 9x12-inch casserole dish, set aside. In a large bowl, mix eggs, sugar, milk, cottage cheese, sour cream, vanilla and melted butter. Add mashed sweet potatoes and noodles and mix until evenly coated. Add raisins if desired. 

Pour into prepared casserole dish. Mix cornflakes with sugar and cinnamon. Sprinkle cornflakes on top of noodles. Bake for 90 minutes, allowing to cool slightly before serving.
